Back to Blogging - Menu Plan Monday

Well, it's been awhile! I took a long break from blogging but I am hoping to get back into the swing of things and what better way than to start off the week with our Menu Plan!

This week we'll be having:

 Salmon Burgers and some kind of pasta salad

 Salisbury Steak - but I am going to try a recipe for mashed cauliflower instead of potatoes!

Stuffed Shells

 My Momma's Chili - because it's starting to feel cold!

Enchiladas (my favorite!)

Asian Turkey Meatballs from Skinnytaste

Spaghetti - a lot like the crockpot version here, but I am going to use ground beef and little something else

  1. Glad to meet another WW gal in the blogosphere! Your menu sounds fab.

    I just wanted to let you know that the Mac & Cheese I posted on my menu plan this week DID have a wee bit of tweaking to make it a little more WW-friendly when I calculated it. I used 2% milk and low-fat shredded cheddar cheese instead of the full-fat varieties used in the original recipe. And it is STILL super-yummy!


  2. Hey Niki! I was going to use powedered nonfat milk, do you know if that makes a huge difference (taste and/or points) I am wondering if that is maybe why my last mac n cheese failed :(
