What To Do With Your Leftover Chili

Two options are at the top of my head for the leftover chili...

First:

Chili Appetizer Dip

I'm not taking pictures of this one because, well I'm not making it. If I make it, I'll eat it, and I don't have any parties to take it to, so for this you will have to use your imagination!

Here is what you need:

Package of cream cheese (1/3 less fat is FINE, can't tell the difference if you ask me)
1-2 cups of leftover chili (or canned chili - beans and meat)
Mexican blend shredded cheese - or whatever kind of cheese you have really
Bag of tortilla chips

And here are the very simple steps:

1. Get an oven-safe dish - a clear casserole or pie dish is normally what I use - what size you use depends on how much you want to make... you can easily double this up or cut it in half.

2. Take your cream cheese and spread it on the bottom of the dish - around 1/2 inch thick.

3. Pour the chili over top the cream cheese - however much you think looks right (I promise this is not an exact science, whatever looks tastiest - I normally do it thick enough to where I can't see the cream cheese and maybe an inch thick if you want some guidelines)

4. Sprinkle the cheese on top of the chili.

5. Throw it in the oven - 400 degrees for around 10-15 minutes (basically until it warms up and the cheese melts), and don't worry if you are taking it somewhere and can't warm it back up, it will still get devoured even after it's cooled off, so no worries.

6. Set it out with a bag of chips and watch it disappear. :)

AND second:

Chili Dogs!


My darling SS woke up at 12:30 this afternoon and had 3 chili dogs for breakfast (I guess it's brunch at this hour!) This photo is of his second dog - you can see by the messy plate that you better have plenty of napkins on hand.

To make these, grill up your hot dogs (we use turkey) and your buns, top them with cheese, and top that with piping hot chili to melt the cheese... and prepare to make a mess!

  1. Another great idea to make with leftover chili is Chesesy Chi-mac. Cook up some macaroni noodles and add about 2 cups cooked to a pot with about a bowl of leftover chili, more or less to your own personal tastes, add 1 or 2 slices of american cheese and heat through. i will sometimes add a squit of ketchup to kinda change the taste slightly. This is pretty tastey. Rebecca
